Frittata Primavera

Ingredients

  • 50g Australian butter
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1 red capsicum, diced
  • 4 large mushrooms, sliced
  • 1 cup grated Australian tasty cheddar cheese
  • 1 small zucchini, grated
  • 2 eggs, lightly beaten
  • 1/4 cup plain flour
  • 1/4 cup Australian cream
  • freshly cracked black pepper, to taste
  • 1/2 cup Australian shredded Parmesan cheese, for sprinkling
  • 1 teaspoon dried mixed herbs, for sprinkling
  • 1 teaspoon paprika, for sprinkling

Method

  1. Combine butter, onion, garlic, capsicum and mushrooms in a large bowl. Cover and cook on High (100%) for 3 minutes. Stir in remaining ingredients. Spoon the mixture into a buttered 22cm serving dish. Sprinkle with parmesan cheese, herbs and paprika. Cook, elevated, on High (100%) for 5-6 minutes. Stand a further 5 minutes before serving.
