Fritatta Rolls

Serves 4


  • 2 teaspoons olive oil
  • 1/2 cup frozen peas
  • 2 spring onions, chopped
  • 100g ham, sliced
  • 3 eggs
  • 1/2 cup Australian milk
  • 2 tablespoons grated Australian parmesan cheese
  • 1 tablepoon chopped flat leaf parsley
  • salt and freshly ground black pepper, to taste
  • 4 ciabatta bread rolls, split
  • 1/4 cup chutney
  • 8 slices Australian cheddar cheese
  • 60g lettuce

  1. 1. Heat oil in a 25cm frying pan, add peas and spring onions, cook for 1-2 minutes. Add ham and distribute evenly over bottom of pan. Pour in combined eggs, milk, cheese, parsley and seasonings.
  2. 2. Cook, covered over low heat for 5-7 minutes until almost cooked through, then place under a pre-heated grill for 3-5 minutes until golden and set. Turn frittata out onto a plate, cut into wedges and refrigerate until required.
  3. 3. For serving, fill rolls with lettuce, cheese, wedges of warm or cold frittata and a dollop of chutney.

Tips / Handy Hints

Preparation Time: 20 minutes Cooking Time: 20 minutes Make the frittata at the beginning of the week to save time when making lunch each day. Try using other flavourings in the frittata such as olives and crumbled ricotta, or tuna and red onion.
