Fresh Strawberry Ice Cream

Serves 6-8


  • 3 egg yolks
  • 1/2 cup caster sugar
  • 2 cups Australian milk
  • 1 teaspoon vanilla essence
  • 300ml Australian pure cream
  • 1 punnet strawberries, mashed
  • 2 tablespoons brandy or kirsch

  1. 1. In the top of a double saucepan, combine egg yolks and sugar, gradually stir in milk.
  2. 2. Cook over simmering water, stirring constantly until mixture thickens enough to coat the back of the spoon. Allow to cool.
  3. 3. Fold in vanilla essence, cream and strawberries and brandy.
  4. 4. Pour into a 3 cup ice cream tray or plastic container. Freeze until firm.
  5. 5. Scoop and serve with whipped cream and flaked toasted almonds or chocolate curls.
