Fresh Herb Muffins

Serves 12


  • 2 cups self-raising flour
  • 1 cup wholemeal self-raising flour
  • 60g Australian reduced fat butter blend
  • 1 tablespoon chopped fresh basil
  • 2 tablespoons chopped fresh chives
  • 2 teaspoons chopped fresh oregano
  • 3/4 cup grated Australian reduced fat cheddar cheese
  • 1 cup Australian skim milk
  • 1 egg, lightly beaten
  • 1 egg white, lightly beaten

  1. Sift flours into a large bowl and rub in butter until mixture resembles breadcrumbs. Mix in herbs, cheese, milk and eggs until well combined. Spoon heaped tablespoons of mixture into deep, straight-sided non-stick muffin pans. Bake at 200oC for 20 minutes or until golden brown. Turn out onto a wire rack and allow to cool.
