Fresh Beetroot with Mint Dressing

Serves 4-6


  • 3 medium beetroot, stalks removed
  • 1 teaspoon sugar
  • 1 medium cucumber, halved lengthwise and sliced
  • 6 spring onions, cut diagonally
  • 1 cup Australian natural yogurt
  • 1 tablespoon freshly chopped mint
  • 1/4 teaspoon salt
  • cracked black pepper, to taste

  1. Place beetroot in a saucepan. Cover with water and add sugar. Simmer covered for 30-45 minutes until tender when tested. Drain and cool. Carefully remove skins and cut into small wedges. Place in the middle of a serving dish and arrange cucumber around the edge. Sprinkle with spring onions. Pour over mint dressing just before serving.
  2. MINT DRESSING: Combine all dressing ingredients together and chill for 1 hour to allow flavour to develop.
