French Toast is a clever way to use up leftover stale bread from the school or work lunches. Make it dairy rich with a dollop of thick and creamy yoghurt.

INGREDIENTS

  • 1 egg, lightly beaten
  • 1/2 cup milk
  • 10g butter
  • 6 slices thick white bread
  • 1 banana, sliced
  • 1/2 cup sliced strawberries
  • 200g tub fruit yoghurt
  • 1/2 teaspoon cinnamon sugar

METHOD

  1. Whisk egg and milk until combined.
  2. Melt butter in a non-stick frypan. Quickly dip bread into egg mixture one slice at a time and panfry on both sides until lightly browned.
  3. Serve topped with banana, strawberries, fruit yoghurt and cinnamon sugar.
