French Onion Soup with Cheesy Croutons

Serves 4


  • 50g Australian unsalted butter
  • 6 onions, thinly sliced
  • 1 tablespoon flour
  • 1 litre beef stock, warmed
  • 2 cups warm water
  • Cheesy Croutons
  • 1 French stick, cut into 8 thick slices
  • 40g Australian unsalted butter, melted
  • 1 cup grated Australian gruyere or tasty cheese

  1. 1. Melt butter in a saucepan, add onions and cook slowly over low heat for 40 minutes or until onions are light brown in colour.
  2. 2. Add flour and cook for 3 minutes, stirring constantly. Add stock and water and mix well. Bring to the boil, reduce heat and simmer, uncovered for 15 minutes. Pour into serving bowls and top with Cheesy Croutons.

  4. 1. Brush bread with butter, place on an oven tray and bake at 180°C for 10 minutes or until crisp.
  5. 2. Top with cheese and grill until cheese is just melted.
