French Custard Ice Cream

Serves 4


  • 1 1/4 cups Australian reduced cream
  • 2 eggs
  • 3 tablespoons sugar
  • 2 teaspoons vanilla essence

  1. Combine cream, eggs and sugar into a bowl and stir over a saucepan of simmering water. Without boiling, cook custard until thickened (enough to coat the back of a wooden spoon). Stir in the vanilla essence and allow to cool. Pour into an ice cream maker and churn according to manufacturers instructions. Place in a freezer tray or container, cover and freeze until firm.
  2. NOTE : Remove ice cream from freezer and stand in refrigerator for 15 - 30 minutes prior to scooping.
