Foundation Butter Cream


  • 60g Australian unsalted butter
  • 155g icing sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla essence

  1. Cream butter and icing sugar until light and fluffy. Add vanilla and enough milk to make a good spreading consistency. Sufficient filling for 2, 20cm cakes.
  2. Variations -
  3. Rum and Honey Butter - Omit vanilla essence and add 1 teaspoon rum and 1 dessertspoon honey.
  4. Lemon Butter Cream - Replace vanilla essence with lemon essence or use the finely grated rind of 1 lemon.
  5. Peppermint Butter Cream - Use peppermint essence in place of vanilla.
  6. Sherry Butter Cream - Omit vanilla, milk and add enough sweet sherry until of a good spreading consistency.
  7. Banana Butter Cream - Add banana essence instead of vanilla or use 1 banana mashed. Less milk will be required.
  8. Chocolate Butter Cream - Add 1 tablespoon cocoa to the icing sugar.
