Flourless Chocolate and Roasted Almond Cake

  • 250g Australian unsalted butter
  • 250g milk chocolate, roughly chopped
  • 8 eggs, separated
  • 250g caster sugar
  • 250g unsalted roasted almonds, ground
  • icing sugar, for dusting
  • Australian thickened cream, whipped, for serving

  1. 1. Combine butter and dark chocolate in a bowl over simmering water and stir until melted. Allow to cool slightly.
  2. 2. Beat egg yolks and caster sugar together until thick and creamy.  Fold in chocolate mixture and ground roasted almonds. Beat egg whites until soft peaks form and fold into chocolate mixture.
  3. 3. Pour mixture into a buttered and paper lined 28cm springform pan and bake at 180°C for 1 hour. Allow to cool before slicing. Dust with icing sugar and serve with whipped cream.
