Florentine Ramekins

Serves 4


  • 4 eggs, lightly beaten
  • 250g firm white fish fillets, cut into 2 cm cubes
  • 100g frozen chopped spinach, thawed, moisture squeezed out
  • 1/3 cup Australian cream
  • 2 tablespoons lemon juice
  • ground black pepper, to taste
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup grated Australian cheddar cheese

  1. Combine all ingredients together and divide mixture between 4 individual ramekin or souffle dishes. Bake at 160C for 30-35 minutes until set and golden brown. Serve immediately.
  2. NOTE: Chicken can be substituted for the fish if desired.
