Fish Turbans

Serves 6


  • 6 firm white fish fillets
  • 200g Australian continental-style cottage cheese
  • 1 x 425g can unsweetened pineapple pieces, drained
  • 1/2 cup tomato juice
  • freshly ground black pepper, to taste
  • 2 tablespoons cornflour

  1. Pat fillets with absorbent paper. Spread each fillet with cottage cheese, place pineapple pieces in the centre of each fillet, roll up and secure with toothpicks. Place into a baking dish, pour over tomato juice and sprinkle with pepper. Cover and bake at 180C for 20 minutes. Remove toothpicks and place fish onto a serving plate, reserving the juice from the fish. Blend cornflour with a little reserved liquid to form a smooth paste, add to remaining liquid and heat, stirring until thickened. Spoon over fish and serve.
