Fish Diable

Serves 4


  • 4 white fish fillets, e.g. gemfish, flounder or sea perch (500g)
  • 1 tablespoon lemon juice
  • crushed black peppercorns
  • 6 spring onions, sliced
  • 1/4 cup dry white wine
  • 1 tablespoon tomato paste
  • few drops tabasco
  • 1/4 cup Australian reduced cream

  1. Gently cook fish in a non-stick frying pan with lemon juice and peppercorns. When browned and cooked through, remove the fish to a heated serving dish and place in the oven to keep warm. Add the spring onions, wine, tomato paste and tabasco to the pan and reduce by half. Stir in the cream and serve immediately poured over the fish. Serve with steamed broccoli and braised cabbage.
