Fish and Aspargus Supreme

Serves 4


  • 1/2 lemon
  • 4 fish fillets, e.g. sea perch, gem
  • 1 x 340g can asparagus, drained
  • Cheese sauce (see below)
  • ground nutmeg
  • 1 tablespoon Australian butter
  • 1 1/2 tablespoons plain flour
  • 1 cup Australian skim milk
  • 1/3 cup grated Australian cheddar cheese
  • salt and freshly ground pepper, to taste

  1. Cheese Sauce - Melt butter in a saucepan. Add flour and cook for 1 minute. Add milk and stir until thickened. Add cheese and season to taste.
  2. Squeeze some lemon juice over the base of a casserole dish. Place the fish on the bottom, place the asparagus over the fish. Pour the cheese sauce over and sprinkle with nutmeg. Bake at 180oC for 20 minutes. Serve with broccoli, grilled tomatoes and baked potatoes.
