Fig and Walnut Baked Apples

Ingredients

  • 6 green cooking apples
  • 1 tablespoon lemon juice
  • 60g Australian butter
  • 1 cup fresh white breadcrumbs
  • 1/2 cup chopped figs
  • 1/4 cup chopped walnuts
  • 1/3 cup golden syrup

Method

  1. Score apple skins and remove centres with corer ensuring each opening is the size of a 10 cent piece. Brush insides with lemon juice. Melt butter in a frypan and add breadcrumbs. Stir continually over high heat until crumbs are crisp and golden. Add figs and walnuts. Press mixture into the centre of each apple. Arrange apples in large oven proof dish. Spoon a tablespoon of golden syrup over each. Bake at 160C for 1 hour until apples are soft.

Tips / Handy Hints

Prepare apples as above. Melt butter in the microwave on High for 1 minute until melted. Add breadcrumbs and cook a further 3 minutes until golden and crisp. Stir every minute. Add figs and walnuts. Press mixture into the centre of each apple. Arrange apples in a circle on a microwave dish. Spoon a tablespoon of golden syrup over each. Microwave on High, uncovered for 1 1/2 - 2 minutes per apple. Let stand 3-4 minutes before serving.
