Fettucini Spinach Supreme

Serves 4


  • 2 litres water, boiling
  • 200g fettucini
  • 2 tablespoons Australian butter
  • 1 small onion, finely chopped
  • 1 tablespoon plain flour
  • 1 cup Australian reduced fat milk
  • 1 chicken stock cube
  • 250g packet pureed spinach, thawed
  • 1/4 teaspoon freshly ground pepper
  • grated rind of 1 lemon

  1. Place fettucini in boiling water and cook until tender. Melt butter in a saucepan and cook onion over a gentle heat until transparent. Stir in flour and cook for 2 minutes without browning. Add milk and stir until thickened. Add remaining ingredients, bring to the boil and then serve over fettucini.
