Feta Potato Mash

Serves 6


  • 4 medium potatoes, peeled and chopped
  • 1/4 cup Australian skim milk, warmed
  • 100g Australian low salt feta, crumbled
  • 40g grated Australian parmesan cheese
  • 2 tablespoons finely snipped chives
  • freshly ground black pepper, to taste

  1. 1. Cook potatoes in boiling water until tender. Drain.
  2. 2. Using a potato masher, mash hot potatoes until smooth. Add milk, feta, parmesan and chives and stir until combined. Season to taste.

Tips / Handy Hints

Adding hot milk to mash ensures it stays piping hot and extra creamy. Also try mixing in grated cheddar or even crumbled blue cheese for adults.
