Feta 'N' Spinach Pie

Serves 6


  • 3 tablespoons Australian butter
  • 2 medium onions, sliced
  • 1 kg spinach, washed, drained and chopped
  • 1 teaspoon dried dill
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon salt
  • fresh black pepper
  • 1/2 cup Australian milk
  • 250g Australian feta cheese, crumbled
  • 4 eggs, beaten
  • 125g Australian butter, melted
  • 16 sheets filo pastry

  1. Melt butter and fry onions until transparent. Add spinach. Cover and cook for 5 minutes. Add dill, parsley, salt and pepper. Cook rapidly and stir constantly for 10 minutes until excess liquid has evaporated. Transfer to a mixing bowl. Allow to cool. Add milk, cheese and eggs and blend together. Butter an oblong casserole dish. Line dish with 8 sheets of filo pastry, brushing each sheet with melted butter. Add spinach filling. Place remaining filo pastry on top, brushing each sheet and the top with butter. Bake at 180oC for 45 minutes.
