Feta Bruschetta

Serves 6


  • 1 large red pepper
  • 50g Australian butter
  • 1 clove garlic, crushed
  • 1 teaspoon oregano
  • 1 french stick
  • 200g Australian feta cheese, cubed
  • 1/2 cup black olives
  • 2 spring onions, chopped
  • 2 tablespoons grated Australian Parmesan cheese

  1. Grill the red pepper, turning occasionally, until blackened on all sides. Place into a paper bag to cool before peeling, deseeding and cutting into strips. Melt the butter in a frypan and add the garlic and oregano. Cut the french stick diagonally into 2cm slices and brush on both sides with garlic butter. Grill on both sides until lightly toasted. Top with the pepper, feta, olives and spring onions and sprinkle with parmesan. Grill for 2 minutes until the cheese softens. Serve immediately.
