Festive Torte

  • 125g Australian butter
  • 1/2 cup caster sugar
  • 1 cup dried mixed fruit
  • 2 tablespoons unsalted cashew nuts
  • grated rind of 1/2 lemon

  • 3 eggs, lightly beaten
  • 1/2 cup Australian milk
  • 1 tablespoon lemon juice
  • finely grated rind of 1/2 lemon
  • 2 cups self-raising flour

  1. For the topping: Cream butter and sugar together until light and fluffy. Spread evenly over the base of a buttered and lined 20cm round cake pan. Sprinkle remaining topping ingredients evenly on top.
  2. For the cake: cream butter and sugar together until light and fluffy. Gradually beat in the eggs. Combine milk, lemon juice and rind and fold in alternately with flour. Carefully spoon mixture over topping. Bake at 180C for 1 hour or until cake is cooked in the centre. Cool slightly before turning onto a serving plate.
