Fabulous Frittata



  • 25g Australian Butter
  • 100g sliced salami or ham
  • 125g button mushrooms, sliced
  • 1 red pepper, sliced into rings
  • 1/2 bunch spring onions, chopped
  • 5 eggs
  • 1 tablespoon Australian Milk
  • 125g Australian Cheddar Cheese, grated
  • 2 tablespoons freshly chopped parsley
  • salt and freshly ground black pepper, to taste

  1. 1. Heat the butter in a frying pan and saute the salami, mushrooms, red pepper and spring onions for 2-3 minutes, stirring occasionally. Lightly beat together the eggs, milk, cheese and parsley and season to taste.
  2. 2. Pour the egg mixture into the pan and cook over a moderate heat for 5 minutes until the underside is golden. Place the pan under a hot grill for a further 3 minutes until the frittata has set and the top is golden brown.
  3. 3. Cut into wedges and serve immediately with a crisp green salad and crusty bread.
