Easy Cheesy Pumpkin and Leek Gratin

Serves 4


  • 600g pumpkin, peeled and diced
  • 1 leek, cut into thick slices
  • 2 rashers bacon, thickly sliced and chopped
  • 1 cup Australian cream
  • 1 cup chicken or vegetable stock
  • 1 teaspoon nutmeg
  • 2 cups Australian cheddar or gruyere cheese, grated
  • 4 slices fresh bread, roughly crumbled
  • salt and freshly ground black pepper, to taste

  1. 1. Arrange pumpkin, leek and bacon in a large buttered gratin or baking dish.
  2. 2. Combine cream, stock and nutmeg and pour over vegetables.
  3. 3. Combine cheese, crumbled bread, salt and pepper and sprinkle on top. Bake at 180°C for 50 minutes or until pumpkin is tender.

Tips / Handy Hints

Try substituting the pumpkin for sweet potato.
