Date and Apricot Muesli Squares

Makes 16 squares


  • 125g Australian reduced fat cream cheese
  • 1/2 cup caster sugar
  • 2 teaspoons grated lemon rind
  • 1/2 cup wholemeal plain flour
  • 1/4 cup Australian light evaporated milk
  • 1 cup chopped dates
  • 1/2 cup chopped dried apricots
  • 1/2 cup untoasted muesli
  • 1/4 cup rolled oats

  1. 1. Beat the cream cheese, caster sugar and lemon rind together until well combined.
  2. 2. Fold through flour and milk alternately. Fold through remaining ingredients and spoon into a baking paper lined 16cm x 28cm slab pan. Press down and bake at 180°C for 30-35 minutes. Allow to cool before cutting into squares.
