Curried Yogurt Chicken Salad

Serves 4

Ingredients

  • 1 cup Australian low fat yogurt
  • 1/2 teaspoon curry powder
  • grated rind of 1 orange
  • 1 tablespoon fresh orange juice
  • 2 spring onions, chopped
  • 1/2 red pepper, chopped
  • 1 stalk celery, chopped
  • 1 orange, cut into segments
  • 2 cooked chicken fillets, cut into strips
  • lettuce leaves, for serving

Method

  1. Combine the yogurt, curry powder, orange rind and juice together to form a dressing. Combine all the remaining ingredients together, except the lettuce, and drizzle over the dressing. Serve in lettuce cups.
