Curried Vegetables and Pasta

  • 150g noodles
  • 2/3 cup French beans, cut into 3cm strips
  • 1/2 cup diced carrot
  • 2/3 cup diced pepper
  • 190g can champignons, drained
  • 200g Australian natural yogurt
  • 2 tablespoons peanut butter
  • 1/2 teaspoon curry powder
  • 3/4 cup (150g) diced banana

  1. Cook noodles and vegetables in boiling water until tender. Combine yogurt, peanut butter and curry powder. Drain noodles and vegetables and return to saucepan together with banana and yogurt mixture. Stir well and serve immediately.
