Curried Rice and Scallop Delight

Serves 4


  • 1 cup long grain rice
  • 1 teaspoon curry powder
  • 2 1/2 cups chicken stock
  • 1/2 cup Australian skim milk powder
  • 6 spring onions, sliced diagonally
  • 2 tablespoons chopped parsley
  • 1 cup chopped tomato
  • 500g scallops, cooked
  • 2 tablespoons Australian low fat natural yogurt

  1. Wash rice under running water until water runs clear. Place rice, curry, stock and milk powder in a saucepan. Bring to the boil, cover and simmer for 15 minutes or until rice is cooked and liquid absorbed, stirring occasionally. Stir remaining ingredients through rice. Heat gently and serve with a green salad.
