Curried Prawns

Ingredients

  • 50g Australian butter
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 2 teaspoons curry powder
  • 1 red pepper, seeded and diced
  • 1 green pepper, seeded and diced
  • 2 tablespoons flour
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon fresh grated giner
  • 3/4 cup hot chicken stock
  • 1kg green prawns, shelled and deveined

Method

  1. Combine butter, onion, garlic, curry powder and peppers in a microwave casserole dish. Cover and cook on High (100%) for 3 minutes. Stir in flour, sugar, lime juice, ginger and hot chicken stock and mix to combine. Cook covered on High (100%) for 4 minutes. Add the prawns, reduce power frequently. Serve hot over boiled rice.
