Curried Cheese Scallops

Ingredients

  • 750g scallops, debearded
  • 30g Australian butter
  • 1/2 cup chopped spring onions
  • 1 red pepper, chopped
  • 2 teaspoons curry powder
  • 1/4 cup flour
  • 1 1/2 cups Australian milk
  • 1 1/2 cups grated Australian cheddar cheese
  • freshly ground black pepper

Method

  1. Thread scallops onto 4 wooden skewers. Melt butter in a dish on High (100%) for 1 minute. Add spring onions, red pepper, curry powder and flour, cover and cook on High (100%) for 30 seconds. Gradually blend in milk. Cover and cook on High (100%) for 3-4 minutes until thickened. Stir in cheese, black pepper and scallop skewers. Cover and cook on High (100%) for 6-7 minutes. Serve with boiled rice and pappadums
