Cunning Stunning Carrot Cake

Ingredients

  • 70g Australian butter
  • 1/4 cup brown sugar
  • 1 egg
  • 1 cup wholemeal self raising flour
  • 1 cup coarsely grated carrot
  • 3/4 cup Australian skim milk
  • 1/2 cup raisins
  • 1/4 cup sultanas
  • TOPPING:
  • 1/2 cup bran cereal, crushed slightly
  • grated rind of 1 lemon
  • 2 tablespoons honey

Method

  1. Cream butter and sugar together. Beat in egg. Fold through flour and carrot with the milk, then mix in raisins and sultanas. Place in a lightly buttered and lined 21cm x 13cm x 7cm loaf pan and bake in a moderate oven for 45 minutes or until a skewer inserted into the centre comes out clean. Sprinkle topping over and bake at 190C - 200C for 5-10 minutes.
  2. TOPPING - Combine all ingredients together.
