Crunchy Chocolatines


  • 60g Australian butter
  • 60g dark chocolate, roughly chopped
  • 1/3 cup golden syrup
  • 1/3 cup brown sugar
  • 1/2 cup plain flour
  • 200g Australian continental-style cottage cheese
  • 2 tablespoons caster sugar
  • 1 tablespoon Grand Marnier liqueur
  • 2 tablespoons finely chopped mixed peel
  • 1/2 cup Australian thickened cream, whipped

  1. Melt butter, chocolate, golden syrup and brown sugar together over a gentle heat. Cool slightly before beating in the flour. Place teaspoons of the mixture on a lightly buttered baking tray, allowing room for spreading. Bake at 160C for 10 minutes. Allow to stand for 2-3 minutes on the tray before carefully lifting off onto a cooling rack. Allow to cool completely. Beat cottage cheese until smooth and fold through remaining ingredients. Join the chocolatines together with the filling.
