Crispy Swiss Cheese Finger Sandwiches

  • Australian butter, for spreading
  • 8 thin slices vienna or sourdough bread
  • 100g Australian Swiss style cheese, sliced
  • 4 slices smoked leg ham
  • 2 teaspoons seeded mustard
  • 2 teaspoons green olive tapenade
  • black pepper, to taste
  • extra Australian butter, for cooking

  1. 1. Spread butter on both sides of bread slices.
  2. 2. Spread 4 slices of bread with mustard, on one side. Top with ham, sliced Swiss style cheese and season with pepper.
  3. 3. Spread remaining bread with tapenade on one side and cover cheese to make sandwiches.
  4. 4. Melt extra butter in a non-stick frypan over medium heat. Cook sandwiches turning once until they are golden brown and cheese has melted.
  5. 5. Cut sandwiches into fingers and serve hot.
