Crispy Beef Rolls

Serves 6


  • 125g ghee
  • 380g minced topside
  • 6 hamburger rolls
  • 1 teaspoon thyme
  • 1 clove garlic, crushed
  • freshly ground black pepper to taste
  • 4 rashers of bacon, finely chopped
  • 125g Australian continental style cottage cheese
  • 1 small onion, finely sliced

  1. Melt 30g ghee in frying pan. When foaming subsides, add meat and allow to brown, stirring pan occasionally. Cut rolls in half. Gently remove bread centres to within 1 1/2cm of the edges. Mix remaining ingredients except ghee into browned meat. Divide mixture between rolls. Replace tops. Place on baking tray. Melt remaining ghee. Brush over rolls. Bake at 180oC for 30 minutes, brushing rolls occasionally with the butter.
