Crisp Green Salad

Serves 4

Ingredients

  • 1 bunch silverbeet, blanched and shredded
  • 1 cucumber, sliced
  • 1/3 cup pecan nuts, lightly toasted
  • 1 bunch spring onions, chopped
  • 12 stalks asparagus, blanched
  • 1/2 cup Australian natural yogurt
  • 1 clove crushed garlic

Method

  1. Toss together silverbeet, cucumber, pecans, spring onions and asparagus. Combine yogurt and garlic and mix well. Pour over salad mix.
