Creamy Mushroom Soup

Serves 4


  • 50g Australian butter
  • 2 onions, chopped
  • 250g mushrooms, sliced
  • 1/4 cup plain flour
  • 2 cups chicken stock
  • 1/2 cup Australian milk
  • freshly ground black pepper
  • 1/2 cup Australian sour cream

  1. Melt the butter in a saucepan and saute onion and mushrooms until softened. Stir in the flour, and cook a further minute. Blend in combined stock and milk. Season to taste, cover and simmer for 10 minutes. Add sour cream. Reheat gently, without boiling.
