Creamy Mushroom Parmesan Pasta

Serves 4


  • 500g spiral pasta
  • 25g Australian butter
  • 4 spring onions, chopped
  • 250g button mushrooms, sliced
  • 1 tablespoon flour
  • 1 1/2 cups Australian thickened cream
  • 1/2 cup grated Australian parmesan cheese
  • shaved Australian parmesan cheese, for serving
  • freshly ground black pepper, to taste

  1. 1. Cook pasta in a large saucepan of boiling water until al dente.
  2. 2. Meanwhile, melt butter in a frypan and saute the spring onions and mushrooms for 5 minutes. Sprinkle the flour over the mushrooms and cook, stirring for 2 minutes.
  3. 3. Combine the remaining ingredients together and add to the frypan. Gently bring to the boil, stirring until thickened. Drain the pasta and add to the sauce. Serve with shaved parmesan cheese, sprinkled with pepper.
  4. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
