Creamy Mashed Potato

Serves 4


  • 1kg potatoes, peeled and chopped
  • 1/2 cup Australian milk, warmed
  • 80g Australian butter, chopped
  • salt and white pepper, to taste

  1. 1. Boil potatoes until tender. Drain well, return to same saucepan and cook over low heat, shaking saucepan to evaporate excess moisture.  Remove from heat and mash until smooth.
  2. 2. Add milk, butter and seasonings and beat with a wooden spoon until well combined. Serve immediately.
  3. Variations:
  4. *substitute 250g potato for 250g orange sweet potato (kumera) and a pinch of nutmeg or 250g parsnip or 250g swede.
  5. *add 2 tablespoons chopped fresh basil and fold through 1/2 cup Australian mascarpone cheese.
  6. *add 2 tablespoons basil pesto and serve with shaved Australian parmesan cheese.
  7. *saute 200g sliced mushrooms and 1 clove crushed garlic in 50g Australian butter and fold lightly through the mash just before serving.
  8. *fold 1cup grated Australian Swiss style or gruyere cheese through the mash just before serving
