Creamy Ginger, Herb & Chicken Sandwiches

Makes 40


  • 80g salted peanuts
  • 50ml sweet chilli sauce
  • 2 teaspoons freshly grated ginger
  • 2 cloves garlic, crushed
  • 30g chopped coriander
  • 30g chopped basil
  • Juice of 1 lime
  • 125g Australian spreadable cream cheese
  • 500g chicken breast, poached and chopped
  • 1 loaf (20 slices) milk bread or white square sandwich bread
  • watercress for garnish

  1. 1. Process peanuts, sauce, ginger, garlic, coriander, basil and lime in a food processor until smooth. Fold in cream cheese and chicken.
  2. 2. Sandwich slices of bread together with chicken mixture, trim crusts off and cut each into four finger sandwiches or points. Keep covered with plastic wrap to prevent drying out.
  3. 3. Serve topped with a sprig of watercress if desired.
