Creamy Date and Apricot Couscous

Serve as a delightful conclusion to a middle eastern inspired meal

INGREDIENTS

  • 1 1/4 cups reduced fat milk
  • 1 cinnamon stick, broken in half
  • 2 cardamom pods, bruised
  • 1 kaffir lime leaf or strip of lime rind
  • 1 cup couscous
  • ¼ cup blanched almonds, lightly toasted and chopped
  • 1 cup reduced fat yoghurt
  • 4 fresh dates, pitted
  • 1/4 cup dried apricots, chopped
  • fresh mint leaves, for serving

METHOD

  1. Gently heat milk with cinnamon stick, cardamom and lime leaf for 3-4 minutes. Drain.
  2. Pour hot milk over combined couscous, dates and apricots and stand for 2-3 minutes. Fluff with a fork, stir in half the yoghurt and the almonds.
  3. Serve topped with remaining yoghurt and fresh mint.
