Creamy Chicken and Broccoli

Serves 4


  • 2 cups cooked, diced chicken
  • 200g broccoli flowerettes, blanched
  • 2 tablespoons Australian butter
  • 1 onion, chopped
  • 2 tablespoons plain flour
  • 1/2 cup chicken stock
  • 1 cup Australian cream
  • freshly ground black pepper, to taste
  • 1 cup grated Australian cheddar cheese
  • 1/2 cup dried breadcrumbs

  1. Arrange layers of chicken and broccoli in an 18cm buttered casserole dish. Melt butter in a saucepan and saute onion for 1-2 minutes. Stir in flour and cook for a further minute. Remove pan from heat and gradually blend in chicken stock and cream. Return to heat and cook, stirring continuously until sauce boils and thickens. Stir in seasonings and half the cheese. Pour sauce over the chicken and broccoli. Top with breadcrumbs and remaining cheese. Bake at 200C for 15-20 minutes or until golden brown.

Tips / Handy Hints

Place mixture in a shallow microwaveproof dish, cover, and cook on High (100% power) for 8 minutes.
