Creamy Apricot Turnovers

  • 60g Australian butter, softened
  • 2 sheets frozen puff pastry, thawed
  • 125g Australian cream cheese, chopped
  • 100g canned apricots, drained and halved
  • 2 teaspoons cinnamon
  • 2 teaspoons caster sugar

  1. Butter pastry and cut each sheet into four squares. Place 4 squares of pastry in preheated sandwich maker, buttered side down. Top with cream cheese and apricots. Combine cinnamon and sugar and sprinkle half over turnovers. Close turnovers with 4 remaining squares of pastry. Toast for 3-4 minutes. When cooked, spread with extra butter and sprinkle with remaining cinnamon and sugar.
