Creamy Apricot Chicken

Serves 4


  • 60g Australian butter
  • 1 x 425g can apricot halves in natural juice, juice reserved
  • pepper, to taste
  • 1/4 teaspoon thyme
  • 4 chicken fillets
  • 1/2 cup Australian cream
  • 1 tablespoon cornflour
  • 1 tablespoon water

  1. Combine butter, apricot juice, pepper and thyme in a frying pan and bring to the boil. Add chicken and simmer for 20-25 minutes. Add apricots and return to the boil. Combine cream, cornflour and water and stir into pan. Cook for 3 minutes until sauce thickens. Serve immediately.
