Creamed Rice with Stewed Fruit

Creamed Rice just evokes childhood memories of warming, creamy vanilla scented rice. Serve with fruit to complete the dessert.

INGREDIENTS

  • 1 litre milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla essence
  • 1/2 cup short grain rice, washed and drained
  • stewed fruit, for serving

METHOD

  1. Combine milk, sugar and vanilla essence in heavy-based saucepan and bring to the boil.
  2. Add rice, reduce heat, cover with a tightly fitting lid and simmer very gently, for 50 minutes or until almost all milk has been absorbed. Stir occasionally.
  3. Serve with stewed fruit in individual bowls or glasses.
