Creamed Corn with Maple Bacon

Serves 4--6


  • 4 corn cobs, kernels removed
  • 40g butter
  • 1 small onion, finely chopped
  • 2 sprigs fresh thyme
  • 1/2 cup water
  • 1/2 cup pure cream
  • 4 slices streaky bacon
  • 1 tablespoon maple syrup

  1. 1. Remove the corn kernels from the cobs of corn using a sharp knife and slicing downwards on the cob.
  2. 2. Heat butter over medium heat in a saucepan. Add the onion and cook for 3-5 minutes or until cooked but not browned. Add the corn, water and thyme and bring to the boil. Reduce heat, cover and simmer for 10-15 minutes or until the corn is very tender. Add the cream and simmer uncovered for 5 minutes or until slightly thickened. Remove thyme and season with salt and pepper.
  3. 3. Drizzle bacon with maple syrup and pan-fry over medium heat until golden brown and crispy, turning halfway. Cut into slices and serve over corn.
