Cream of Chicken Soup

Serves 4


  • 20g Australian butter
  • 1/4 cup plain flour
  • 2 cups chicken stock
  • 1 chicken fillet, skinned
  • 1/2 cup Australian cream
  • 1 egg yolk
  • snipped chives, for garnish

  1. Melt the butter in a large saucepan, add the flour and cook stirring for 1 minute. Add the stock and heat, stirring until thickened. Add the chicken and simmer covered for 5 minutes. Remove the chicken and finely dice. Blend the cream and egg yolk together. Whisk a little of the hot stock into the cream and then add the cream mixture to the remaining stock. Add the chicken and reheat gently without boiling. Serve garnished with chives.
