Country-style Pie

Serves 6


  • 1 1/2 cups wholemeal self raising flour
  • 125g Australian butter
  • 1 egg yolk
  • 2 tablespoons water
  • egg glaze
  • 20g Australian butter
  • 1 cup grated carrot
  • 1 large onion, finely diced
  • 1 cup frozen peas, thawed
  • 1 cup grated potato
  • 200g Australian curd-style cottage cheese
  • 3 eggs
  • 2 tablespoons chopped fresh parsley
  • salt and ground black pepper, to taste

  1. Rub butter into flour until mixture resembles fine breadcrumbs. Whisk together egg yolk and water and blend into flour to form a firm dough. Cover and set aside for 30 minutes. Divide pastry in half and roll out one half to line the base of a 23cm pie dish. For the filling, melt butter add vegetables and saute gently for 10 minutes. Allow to cool slightly before adding cheese, eggs, parsley and seasonings. Mix together thoroughly. Spoon filling into pastry case. Roll out remaining pastry and use to encase filling. Trim and decorate edges brush with egg glaze and bake at 200C for 10 minutes. Reduce oven to 180C and bake for a further 30 minutes. Serve hot or cold.
