Cottage Curry Bake

Serves 6


  • 200g broccoli flowerettes
  • 300g cauliflowerettes
  • 500g Australian curd-style cottage cheese
  • 1/4 cup Australian light sour cream
  • 2 tablespoons plain flour
  • ground black pepper, to taste
  • 1 tablespoon curry powder
  • 2 eggs
  • 2 zucchini, sliced
  • 1 red pepper, thinly sliced
  • 1 medium onion, chopped
  • 1/2 cup dried breadcrumbs
  • 100g grated Australian matured cheddar cheese

  1. Blanch broccoli and cauliflower, drain and refresh under cold water. Combine cottage cheese, sour cream, flour, pepper, curry powder and eggs until smooth and mix in vegetables. Spoon into a lightly buttered casserole dish. Combine the breadcrumbs and grated cheese and sprinkle over vegetables. Bake at 190C for 45 minutes.
