Cottage Cheese Pancakes

Serves 2


  • 4 egg whites
  • 1 tablespoon cornflour
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • ground black pepper, to taste
  • 250g Australian continental-style cottage cheese

  1. Beat together egg whites, cornflour, water and seasonings until thick. Gradually beat in cheese until smooth and creamy. Lightly butter a crepe pan or non-stick frypan and heat. Pour in half the mixture and tilt the pan to coat the base evenly. When underside is golden brown, flip pancake and cook until golden. Repeat with remaining mixture. Fold pancakes in half and serve with filling of your choice.
