Cottage Cheese Omelette

Serves 1


  • 250g Australian cottage cheese
  • 2 eggs
  • 1 tablespoon Australian milk
  • 1 teaspoon chopped parsley
  • black pepper, to taste
  • 20g Australian butter
  • 1/2 zucchini, sliced
  • 6 button mushrooms, sliced
  • 1 small tomato, sliced
  • 1/4 cup grated Australian Parmesan cheese
  • paprika, for sprinkling

  1. Whisk together half the cottage cheese, eggs, milk, parsley and pepper. Melt half the butter in a small frypan, add the omelette mixture and cook for 5 minutes. Place under grill until golden. Saute the vegetables with remaining butter until softened, combine with remaining cottage cheese and place in folded omelette. Sprinkle with Parmesan cheese and paprika and grill until golden.
