Cottage Cheese Loaf



  • 2 cups self raising flour
  • 1/4 teaspoon mustard powder
  • 1/4 cup chopped parsley
  • 1 onion, finely chopped
  • 1 cup Australian curd-style cottage cheese
  • 1 egg
  • 40g Australian butter, melted
  • 1/4 cup Australian milk
  • 1/2 cup grated Australian cheddar cheese
  • paprika, for sprinkling

  1. In a large bowl sift flour and mustard together and stir in parsley and onion. Combine cottage cheese, egg, butter and milk together, add to the flour mixture and mix to a soft dough. Turn onto a floured board and knead lightly. Pat into a 30cm round and place onto a lightly buttered oven tray. Mark into wedges and sprinkle with grated cheese and paprika. Bake at 200C for 25-30 minutes or until golden brown.
