Cottage Cheese and Apple Bake

Serves 6


  • 30g Australian butter
  • 1/3 cup caster sugar
  • 3 tablespoons self raising flour
  • 1/3 cup Australian skim milk
  • 200g Australian cottage cheese
  • 1 cup canned pie apple
  • 1/4 cup currants
  • grated rind of 1 lemon
  • 2 eggs, separated

  1. Cream butter and sugar together until light and fluffy. Fold through the flour and milk alternately. Add the cottage cheese, apple, currants, lemon and egg yolks and stir until well combined. Beat the egg whites until stiff and fold through the mixture. Pour into an 18cm round casserole dish and bake at 180°C for 45 minutes until set and golden.
